Nilla Banana Pudding

Nilla Banana Pudding Ingredients

  • 3/4 cup sugar
  • 1/3 cup flower
  • 3 eggs, separated
  • 2 cups of milk
  • Dash of salt
  • 1/2 teaspoon vanilla extract
  • 45 vanilla wafers
  • 5 bananas, sliced

Recipe Instructions

  1. Preheat oven to 350 degrees
  2. Mix 1/2 cup sugar, flour and salt in top of double boiler
  3. Add 3 egg yolks and milk. Cook uncovered, over boiling water 10-12 minutes, stirring constantly
  4. Remove from heat and stir in vanilla
  5. Spread small amount of custard on bottom of baking dish and then cover with a layer of wafers, a layer of sliced bananas and a layer of custard over bananas
  6. Continue to layer wafers, bananas and custard to make a total of 3 layers each. End with custard
  7. Beat egg whites on high speed until soft peaks form. Gradually, add remaining 1/4 cup sugar, beating until stiff peaks form
  8. Pour and spread evenly over custard to cover, sealing well to edge
  9. Bake 15-20 minutes until browned
  10. Let chill for 1 hour
  11. Top with remaining banana and wafers along inside edge of cooked pudding
