A Day in the Life of a Pastry Team Member

My name is Kayleigh Larner I have been with Flagship for around three and a half years or so. I’m a pastry supervisor.
What does a typical day for the pastry team include?
We start early, and its just ovens on, get things in the mixer, crank it out get it in the oven. Let things cool off, we’re constantly multitasking.
- Produce a variety of sweet pastries and desserts, daily.
- Ensure pastries and desserts are baked with quality and production goals in mind.
- Follow recipe guidelines from start to finish, including plating and presentation.
- Create recipes and collaborate on new menu items.
What is the best part about your job?
The most fun part about my job is honestly to egg on my my team they’re so amazingly talented I see myself in them a lot and it’s so fun to to motivate them and just watch their creativity blossom. We have that passion specifically in pastry it’s a such a craft we have the passion that motivates us and we share it. So we all get to try new things together.
What would you say to someone who is interested in a culinary position with Flagship?
Applying for a job at Flagship is so beneficial because there are so many endless possibilities. When I started I did not see myself where I am now. I was an intern and I didn’t rather do anything I was so green, but staying open to feedback and understanding that you do have a feature here. You really are in control of your own success here.
